Preserving Health

The art of making jams and preserves together is a tradition that connects community, saves money, improves health and uses local food resources in a way that decreases waste and the need to buy convenience foods in the off-season. Coming together to resurrect this tradition will inform those who have never preserved and provide some tips for food safety, unique tastes and special diets for those who are experienced.

We will cover classic preserve ratios and techniques, and then learn  where and how to use pectin products. We will explore low-sugar jams. For the more adventurous, an introduction to vegetables in jams, and some tips for thinking about flavour pairings with herbs and spices for making your jams and preserves unique. This first workshop will also cover the basics of canning, including the equipment, safe practices for water bath canning (and when to opt for pressure canning).

Meet Janice Mansfield private chef and gluten-free baker extraordinaire behind Real Food Made Easy, and the creator of House Made cocktail bitters and syrups. In late 2008, Janice launched Real Food Made Easy after many years of a rewarding career as an economist in the BC Public Service. Food and cooking from scratch has always been an integral part of Janice's life, and we are excited to share her passion and knowledge.
